1. Cooking With Jodi at La Jolla Cooks 4U

Heading out to the hills of San Diego, we were so excited to take part in La Jolla Cooks 4 U workshop. Hosted by Jodi a lover of hosting and food who decided the share her kitchen secrets to tourists and locals from all over the world. We headed down to check it out!

The views from the location were beyond breath-taking overlooking the city and ocean view. We then headed out to see the organic garden where Jodi grows majority of the vegetables and fruits used for the workshop.

We then went ahead to make parmesan baskets that would later be filled with salad. First we took shredded parmesan cheese, melt butter in coated pan – non stick and lightly sprinkled green herbs. After the cheese had melted we created a cheese basket but holding the cheese onto a small cup.

We then progressed to create the salad that would be put into the parmesan cheese basket. This consisted of Lettuce Salad, Citrus vingerette, Honey, Dejohn mustard, citrus vinegar, olive oil and herb goats cheese.

Toss cubed butternut squash with 1 tablespoon olive oil and a little salt and pepper. Place on greased baking sheet and roast for 20 minutes until golden brown.

Wash and dry beets place on tin foil and drizzle with olive oil and balsamic vinegar. Wrap in tin foil and roast for an hour or so. Let cool. Once cool, place beet in a towel and whip off the peel and slice.

Placed washed and dried greens on platter, add butternut, sliced beets, pepita and feta cheese. Toss with a balsamic vinaigrette and serve.

The overall experience was 5* all round. Jodi was a great teacher and vibrant host.

2. San Diego Zoo

I think you’d agree no matter how old you are, a trip to the zoo is always a treat!

The 100-acre San Diego Zoo is a not-for-profit conservation organization. The Zoo is well known for its lush, naturalistic habitats and unique animal encounters. It is home to more than 3,700 rare and endangered animals representing approximately 660 species and subspecies and a prominent botanical collection with more than 700,000 plants.

Located in the Children’s Zoo, the 4-D theater offers an immersive rain forest experience that celebrates the sights and sounds of Rio de Janeiro with live macaws, a waterfall and samba music. It features three of the main characters (Blu, Jewel and Nigel) from the movie “Rio.” This is the second 4-D attraction offered at the San Diego Zoo. The first opened in 2011 and currently features “Ice Age: Dawn of the Dinosaurs – The 4-D Experience.” Each 4-D attraction ticket sells for $6; $5 for Zoo members.
